Typically, in spirits, water purity is something manufactured. Techniques like reverse osmosis and ozonation are used to sterilize, purify the water and hold it stable. We don't do any of it. We chose to display nature as is.
The journey of Aupale Vodka begins in a remote glacier valley in northeastern Canada. Here, a mother nature filtration system has been at work for 25,000 years. These glacier valleys draw water down through ice and rock. It then journeys through quartz, silica and what emerges is considered the purest water in North America. This is our water source, hundreds of kilometres away.
Water this pure stays untreated. We could stabilize it, the way it's normally done, but stabilizing would change the very thing we travelled so far to find. So we keep it exactly as the valley gave it to us.This choice comes with its responsibilities. It means that this incredible resource needs to reach the distillery to be made into vodka as soon as possible. We chose to leave the water as is, though this makes it fragile.
Time and temperature are against us but in the end, that is what the purest water in North America asks of us. An exceptional journey, in distance and in time. The foundation of an exceptional vodka.
